Pate Stuffed Chicken
Quick. Simple. Tasty.
An Italian-style tomato-based sauce for your chicken.
Can be made with fresh (ie uncooked) chicken too, increase the cooking time to ensure it's cooked.
Ingredients
2 cooked chicken breast portions
1/2 large onion, finely chopped
4oz mushrooms, sliced
2 15oz tins tomatoes, chopped
1/2 tsp basil
Fry onion gently until soft. Add the mushrooms and fry for 2 minutes. Add the tomatoes and basil. Continue to cook while skinning the chicken portions, add them to the sauce and cook until hot (about 10 minutes). Serve with chips!
