Chicken Pepper Parcels

Our latest favourite! I did this while the rest of the family were on holiday.
I wanted something a bit more healthy than fried food, and this is really tasty - quite peppery though.
It's so easy to cook, prepare, throw in the oven and forget
- the time isn't that critical so it's good to do when you don't know what time they're due back.

Ingredients
Per person:
1 chicken breast portion
1 or 2 slices thin ham
1 or 2 slices onion
salt, fresh ground black pepper
Soy sauce
Worcester sauce
dried oregano
butter

For each person:
take a square of foil and lay a slice of ham in the centre. take a chicken breast portion, sprinkle it with soy sauce and freshly ground black pepper, turn it over onto the ham slice. sprinkle the top with soy sauce & black pepper and lay a slice of ham on top. sprinkle this with dried oregano and lay a thin slice of onion on top. Put a knob of butter on top of this, then wrap up the parcel.

Place all the parcels in an ovenproof dish and add just enough water to cover the bottom of the dish. Cook at gas mark 4 for 40 minutes.

Sauce to accompany (enough for two):
In a jug put one teaspoon of gravy granules, half a chicken OXO, one teaspoon of cornflour and about half a teaspoon of Worcester sauce - mix up the cornflour into the sauce. Add boiling water to make up to 1/2 pint, stir then microwave on full power for 30 seconds, stir again.

Remove the chicken from the parcels, keeping the onion & herbs on top, and put on the serving plate, pour over just enough sauce to cover.

I served this with new potatoes, garlic mushrooms (microwave style!) and carrots, cauli and broccoli florets.
