Pate Stuffed Chicken
Rich and full of flavour.
Ingredients
2 cooked chicken breasts
1 medium onion, chopped
4 cloves garlic, finely chopped
2 oz Brussels pate
1 15oz tin tomatoes
5oz natural yoghurt
salt & pepper
dash Tabasco
1 tsp basil, 2tsp ground coriander
Use only a medium pan. Fry the onions and garlic until golden. Slit the chicken pieces and stuff with slices of pate. Fry for a few minutes on each side, spooning yoghurt over gradually. Cook for a few minutes.
Add the tomatoes, season with salt, pepper, Tabasco, basil and coriander.
Cook for 15-20 minutes uncovered to reduce sauce. Serve with rice or chips.
