Pollo a la Crema (version 2)

The second attempt. Different again, good in its own way.
Just depends what is to hand at the time!

Ingredients
2 uncooked boneless chicken breasts, cut into 3
1 medium onion, chopped
5 cloves garlic, finely chopped
5oz carton cream
4oz mushrooms, sliced
1 glass grappa or brandy
salt & pepper
1 chicken stock cube
1 1/2 - 2tsp soft dark brown sugar


Fry the onions and until soft. Add the garlic, fry until golden. Add the chicken pieces and fry to seal. Remove from the heat, add grappa or brandy and ignite. When the flames have died down, add the mushrooms and cook for 2-3 minutes. Add the cream, cover and simmer gently for about 15 minutes. Add the stock cube and adjust flavour with sugar, salt and pepper. Serve with chips, potatoes, rice or pasta.
